Seedy Pumpkin Loaf
Gluten and sugar free, this chunky loaf is so good you could eat it for breakfast!
1/3 cup sunflower seeds
1/3 cup pepitas, plus 1 tablespoon for sprinkling
2 tablespoons sesame seeds
1 cup chopped, raw nuts
1/4 cup dextrose
1 cup gluten free, self raising flour
1/4 cup smooth rice bran
1 teaspoon nutmeg
2 tablespoons mixed spice
1/2 cup olive/grapeseed oil
1/4 cup rice malt syrup
2 eggs, lightly beaten
1+1/2 cup cooked and mashed pumpkin
Preheat oven to 170C(150C fan forced), line loaf pan with baking paper.
Combine wet ingredients and mix. Add all dry ingredients and stir. Pour into pan and sprinkle with pepitas.
Bake 40 minutes then turn off oven and leave further 10 minutes.
Turn on to wire rack to cool.
