The Skinny Salad Wrap

Looking for a way to undo some of that gorging on gorgeous Christmas food? Here’s a little low – carb invention of my own.

Ingredients: (serves 1)

1 large lettuce leaf(iceberg works well)

1/2 carrot, grated

50g cheese, grated

1 slice ham

handful of snow pea or alfalfa sprouts

few slices capsicum

1/2 tomato, sliced

4 slices cucumber

1 spring onion, finely sliced

Method:

Place salad inside leaf and wrap gently. Can be wrapped in plastic to hold shape.

Enjoy!
