Pumpkin Scones and Sugar Free Jam the kids actually loved!

Buttery, orange pumpkin from my Dad’s garden (where everything grows wild and free) and a sugar free jam that impressed the kids and we have a winner!

For the scones:

1 tablespoon butter

1 tablespoon hot water

1/2 cup dextrose powder

1 egg

1 cup cooked, mashed pumpkin

pinch salt

2 cups Self Raising flour – (1 & 3/4 cups if using gluten free SR flour)

Method:

Beat first 3 ingredients, then add egg, beat again. Stir in pumpkin and salt and lastly, flour. Roll out on floured surface and cut into shapes. Bake in hot (@ 180 C) oven for 10 minutes.

Frozen mixed berries

Frozen mixed berries

500g or 3 cups frozen berries(any; I used a mix of raspberries, blueberries, mulberries and strawberries)

1/2 cup Rice Bran Syrup

Juice and rind 1 lemon

Add all to a saucepan and simmer for 45 minutes or until it thickens, stirring occasionally.

As promised, I’ve left the raw food to the experts and would like to share this delightful find with you.

I had to squeeze past the sewage removal truck to get to it(it’s not usually there), and there were a lot of distractions like bicycle repairs and fruit trees, herb and vege gardens, a massive tree/sandpit Kids Play area, but it was worth it. Oh, and bird poo on the chair. Man, this place was Earthy. But the food, which came out of an open, cluttered but organized kitchen, was lovely; fresh, vibrant, tasty, raw. Cherry Bites and Raspberry Cheesecake

What better way to spend a week off than bake, bake, bake!

Even though this had a lovely flavour, I used bottled cherries and the mixture was waaay too wet, so I shall follow the recipe to the letter next time!

The flavour is delicate, the consistency creamy and silky. I made and used my own cream cheese from full fat, natural yoghurt(full details on how to create see: https://kamilleroach.wordpress.com/2014/12/02/healthy-carrot-walnut-muffins/ ). I shall have to freeze the cheesecake ASAP because it is terribly good and my skinny jeans are getting too tight!
